I totally have a thing for baking – especially in the fall and winter, I guess. This slab apple pie by smitten kitchen is one of our favorites, and it’s perfect for easing you into Monday – I made one last Sunday and we all enjoyed a slice. But it also makes the perfect Monday morning breakfast, am I right? Sigh. So much right.
PS, pie crusts are a weakness of mine, but I seem to be able to pull this one off fairly decently, so even if you’re a bit scared of pastry, I’d give it a go. As you can see, I have given up on perfect looking pie crust and settled for an amazing tasting pie crust. With icing drizzled over to hide the imperfections. In the kitchen, I’ve absolutely embraced a philosophy of “good enough”, since I spend a good bit of my life tracking down “perfect” in my work!
