I grew up loving homemade ice cream, but until this summer, we had never tried fro-yo at home. Wow. Super easy. Super thick and creamy. I would make homemade ice cream way more often if it wasn’t so labor and time intensive to cook and cool the custard. We all love it. Fro-yo is the perfect thing – plus, our summer has already been incredibly hot. As I type this, the thermostat reads 94 degrees and the sun is blazing down. Cool treats are in order. This was adapted from the Cuisinart Recipe website (I have an older version of this Cuisinart ice cream maker that uses a frozen bowl rather than freezing the mixture with ice like the older kind do. I just need to remember to place the bowl in the freezer the night before, in order for it to be cold enough.)
Homemade Vanilla Fro-Yo Recipe
1 c. heavy cream
1 c. 2% milk
3/4 c. granulated sugar
4 c. vanilla greek yogurt
1 T. pure vanilla extract
Pour all of the ingredients into a bowl and mix on low with an electric mixer for about 1-2 minutes, until the sugar dissolves. Turn the machine on, pour the mixture into the freezer bowl and churn until thick and frozen, usually around 20-30 minutes. Serve immediately topped with fresh fruits.
We love topping it with sliced strawberries that are sprinkled with balsamic vinegar and a little bit of sugar, ala one of my favorite cooks, Nigella Lawson.
