Having a little break last week from the whole, meal planning merry-go-round that I face as a mom was awesome. I came back refreshed and determined to stick with a meal plan in spite of this being a super busy week. I’m also realistic with myself up front about what we need with our schedule – meaning, I knew Monday was ridiculous, so I planned to grab Chipotle.
The cool thing that coincides with my meal planning kick this go round was discovering that the latest issue of the Food Network Magazine was full of recipes that I really, really want to try. They’re super easy, and a lot of them are light on the calories.

This is my meal list for this week, and I couldn’t be more excited! I love planning new meals that are healthy, simple, and tasty.
Monday: busy schedule = healthy choice out at Chipotle. We literally ran all day until 8:30pm when we finally fell into chairs, so a homecooked meal wasn’t an option.
Tuesday: Brussels Sprouts (I quarter them, and saute them with onion, bacon, and a spritz of freshlemon juice) and quinoa pilaf
Wednesday: Kale-Turkey Rice Bowl
Thursday: Meatball Tortellini Soup
Friday: Date night dinner out
Saturday: Homemade pizza
Whew! I’ve managed to pull together at least four healthy meals at home for the week. I love that we’re pulling in some veggies that I haven’t been cooking with a lot lately like Brussels sprouts, kale, and fresh spinach. As I’ve mentioned before, this is a rough schedule subject to moving around according to what our day holds. The important thing is that I’ve got a list of meals with all of the ingredients on hand!
