Having a little one with a nut allergy, I’m always searching for great treats for him. Most chocolate is processed on the same equipment with nuts, so we have to be really careful when checking all chocolate treats. So, I love it when I can stumble on/have a slight stroke of genius to combine yummy ingredients together for all of us to enjoy, but especially him.
That’s how these came to be. We were walking the aisles, and he spotted the ginormous pumpkin shaped marshmallows (which are always on the ok list). I also noticed a new brand of chocolate flavored “almond bark” in the same aisle – the title is actually misleading, because it doesn’t contain almonds, but is made for you to “make your own almond bark”. We added carmel to mix, and because the sides ended up sticky, I decided to crush some pretzels, and, well, that’s all she wrote! When the were finished I realized that they were really similar to something my grandmother used to make for Christmas when I was a kid…
Holiday Marshmallow Treats
-large marshmallows {any size, any shape. But if they’re small, they’ll be tedious to dip, so I recommend “large” ones. We happened to find the jumbo pumpkin ones, and the kids were thrilled.}
-kraft carmels/carmel bits {If you’re lucky you’ll find the bits. You don’t have to unwrap them, then!}
-water
– chocolate “almond bark”
– pretzels, crushed
Melt carmels according to the directions on the bag. It requires you to add a bit of water to the carmels, heat and stir.
Lay out foil, wax paper, parchment – anything to set something sticky on and dip the marhsmallows in the melted carmel. Set them on the chosen surface to cool.
Once they’re cooled, melt the “chocolate almond bark” and dip them again. I mostly just got the tops. Set them on your wax paper and allow to cool/harden again.
While you’re waiting, crush a few handfuls of pretzels – I crushed mine a bit by hand, and then put them in the coffee bean grinder that I reserve for crush up crackers and stuff.
Once the chocolate is set, roll the sides of the dipped marshmallows in the crushed pretzels.

** note to mommies/parents with kids that have nut allergies: I used kraft marshmallows and carmels. I was also able to use Plymouth Pantry “almond bark” and Rold Gold pretzels. Always double check your package labels, as products will vary from place to place! 🙂
