I’m back with a post today sharing one of my favorite cookies! We especially love these in the winter, since they’re a bit heavier with the added oatmeal. I’m still neck deep in deadlines, projects, and all kinds of fun stuff, but… who isn’t? Might as well share something fun. As discussed in my previous post that was not a post, I can’t bring myself to call them “white baking chips”, so for the sake of argument, understand that “white chocolate chips” are really “white baking chips”.
Oatmeal Cranberry Cookies
2 sticks of unsalted butter, soft (unless they’re the wacky new 1/2 sticks that I got last week. Then, you’ll need 4. Whatever it takes to get 1 cup.)
1/2 c granulated sugar
1 c. packed, dark brown sugar
2 large eggs
2 T. 2% milk
1 tsp. vanilla
2-1/3 c. all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 c. old fashioned whole oats
1 5 oz. package dried cranberries
1-1/2 c. white chocolate chips
Preheat your oven to 325 degrees Fahrenheit. Place the soft butter in a medium mixing bowl. Add the sugars and using a mixer, whip together until they’re light and fluffy. Add the eggs, milk, and vanilla and whip again. Measure the flour, baking powder, baking soda, salt to the ingredients already in the bowl and mix gently on low until just blended. Remove the mixer, and stir the oatmeal, cranberries, and white chocolate chips in by hand. Allow the dough to sit for a few minutes. (I feel like this gives some of the dry ingredients time to absorb some of the liquid in the mixture, and they bake better.
Spoon roughly 1 Tbsp scoops onto baking trays and bake for about 12 minutes. Just until they’re fluffy and a bit golden around the edges. Remove from the oven and cool on racks. Store in an airtight container. We think they taste even better the next day.
I think these are kind of a fun, healthier (not healthy, ha!) alternative to valentine’s treats with loads of red food coloring in them.
