I absolutely can’t take full credit for this idea. We love Whole Foods, and this is one of the pizzas that they offer as a custom order in their deli. But since we love homemade pizza, too, we’ve added this to our list of favorites here at the house.
I would also like to put out there that I’m not a fan of buffalo wings. Obviously I love the flavor, I guess I just don’t care for the actual wing part. I used my favorite pizza dough recipe “pizza casareccia” from Nigella Lawson’s How to be a Domestic Goddess. (A staple in my cookbook library of very few cookbooks). You could use anything that you love, including the premade partially baked ones. The important part here is that the recipe for the other things is enough to make two small, or one sheet pan of pizza.
Buffalo Chicken Pizza
1 recipe of your favorite pizza dough (enough for two small pizzas or one sheet pan)
1 recipe for buffalo wing sauce from chef John on allrecipes.com (this makes more than you need, but stores well in the fridge. I also read through the comments, and made sure to stick with Frank’s Red Hot as the base + adjust the amount of extra cayenne according to how hot we wanted it. It’s AMAZING.
6 oz. shredded mozzerella cheese (I shred it myself for best melting results)
2 oz. shredded cheddar cheese
2 breaded chicken breast tenderloins (I used frozen)
1 small package of blue cheese crumbles
blue cheese dressing
Prepare your pizza dough according to directions. While your crust is rising, bake off your chicken tenderloins or nuggets according to directions, leaving them just slightly under cooked. Chop into bite sized pieces.
Partially bake the crust for just over half the total required time to finish it. (I blind bake mine for 8 minutes, and finish with another 5 minutes after adding the toppings.)
After partially baking the crust, spoon several tablespoons of the buffalo chicken sauce on to the crust, add the shredded mozzerella and cheddar cheeses, and the chopped chicken. Bake for the remaining time required for your crust. You’ll need a good 5 minutes at least to get the cheeses melted and slightly browned around the edges. When the pizza is finished, top with a bit more buffalo sauce, a few blue cheese crumbles, and a drizzle of your favorite blue cheese dressing.
