Today I’m excited to share a handmade holiday project by ambassador Kimi Coopet of Oh Hello Photo.
She says, “Baking is something we love to do in our house & since it’s Spring Break it’s the perfect time to bust out something pretty. St. Patrick’s Day is right around the corner so in honor of that we decided to make these adorable (and pretty darn easy) rainbow cupcakes.”
St. PATTY’S DAY CUPCAKES
I used this recipe for our cupcakes and this recipe for our frosting. I did add more milk because it wasn’t creamy and spreadable enough for my taste. You can also buy a box of cake mix and pre-made frosting. There is nothing wrong with that and most days that what we do because I don’t have hours to prepare.
For the decorations you need:
* Frosting in red, orange, yellow, green, blue and purple. Wilton makes squeeze tubes in these colors and they are the best, it’s what we used because it’s so easy.
* Saran wrap
* Frosting bag
* Frosting tip (we used the star tip from Wilton 1M)
* Mini Marshmallows
You can pick up the frosting colors, frosting bags and tips at Michael’s.
Once your cupcakes are cooled frost them. The easiest way to just to spread it on with a knife. You can get fancy with a bag and a frosting tip but it will just be covered with a rainbow. Open your frosting bag and slide your tip in the end. If your bag is too small just cut the opening bigger but make sure to only cut a little at a time so you don’t make the hole too big & the tip falls out.
Next cut a piece of saran wrap and create a rainbow line.
After you can created your roll it up like a sushi roll and cut some of the excess saran warp off one end. Place the cut end in the frosting bag and squeeze a little out the tip and you are ready to go. This process will have to be repeated a few times to finish all your cupcakes.
You can create a simple rainbow or you can twist the bag as you go to create a spiral rainbow. Put one some mini marshmallows on the ends and you have yourself a cute little rainbow cupcake!
Don’t forget to lick your bowl, your spatula and your fingers because you will be covered in delicious. That is the best part! Then ENJOY!
