We decided at the last minute to host a birthday party for my husband’s upcoming milestone this month, so I’ve been pulling things together like mad the last week and a half. It’s a bit nautical themed, and definitely masculine. I’ve been posting peeks at a few of the recipes and projects that I’m getting together for it on my instagram feed.
My mother, who is a genius, shared this recipe with me that she had from the booklet that came with her fancy blender. The minute she mentioned this, I knew I had to make it, since these are two of my husband’s favorite flavors. I modified it just a bit, and this is what I came up with! It’s sweet, rich, and has a bit of zing to it with the fresh ginger.
Coconut Pineapple Sorbet
1 small pineapple, cut into pieces, and frozen
3/4-1-1/2 cup coconut milk
1 T. lime juice
1 tsp finely chopped, fresh ginger
1/2 cup sugar
Peel, core, and cut your pineapple into pieces. Lay them out on a tray and freeze. {I left mine in the freezer overnight.} I think this is a key step, because the freezing seems to help the pineapple chop up more easily. Peel and chop the fresh ginger. When your pineapple chunks are frozen, toss everything into the bowl of a food processor, starting with 3/4 c of the coconut milk. Pulse until the mixture is like ice cream – adding more coconut milk as needed, and pausing to scrape the sides when you need to. The amount of coconut milk needed will depend on the size of your pineapple. I just kept going until it looked whipped and yummy.
Pour the mixture into your ice cream maker, and churn until fully frozen – this step makes it easier to keep in the freezer and scoop later. Freeze until you’re ready to serve. For easy scooping, be sure to pull the container from the freezer a few minutes before serving!
Makes about 4-6 servings.
Oh, and the yummy chocolate dipped coconut macaroons on the side are from a local shop called Belly Hugs. They make yummy peanut free/allergen safe goods, which we need for our son.
